We would recommend an ale strain based on the style of beer, or intended flavour profile.
For example:
- If it’s a pumpkin IPA you could use M44 US West Coast
- If it’s an English style ale, you could use M15 Empire Ale, M36 Liberty Bell, or M42 New World Strong Ale
- If it's a Saison, use the M29 French Saison Ale
Pumpkin ales are often reasonably big, dark, robust winter-warming ales, so any of M15 Empire Ale, M36 Liberty Bell or, M42 New World Strong Ale would work, likewise if it’s a pale ale.
As a brewer, its beneficial to consider the specific characteristics of the strains and find which fits the intended beer best (in terms of desired ABV, sweetness, flavour profile etc).
Some people have asked about the M05 Mead Yeast - we wouldn’t recommend the M05 Mead Yeast, since this is essentially a wine strain and not really intended for fermentation of malt sugars.
