Malt extract is simply wort made from malted barley that has had its water content evaporated away.
Mangrove Jack's 1.2kg Pure Malt Extract used to be called "Pure Malt Enhancer" but this was renamed as it was confused with other suppliers' malt enhancers. Those enhancers are typically a lower quality blend of sugar and dried malt. Whereas, Mangrove Jacks Pure Malt Extract is just malt.
There are a few different types of Liquid Malt Extract available:
- Pure Liquid Malt Extract 600g and 1.2kg
- Pure Liquid Malt Extract - Amber, Dark or Light 1.5kg
All Mangrove Jack's malt extracts are non-diastatic.
The density or SG of these Liquid Malt Extracts is approximately 1.4 kg/dm3 at 20°C (68°F), and each has a variance of approximately 1% either side. Each extract contains 78-81% solids by weight and is roughly 75% fermentable overall.
In terms of gravity points, 1.2 kg of Liquid Malt Extract is roughly equivalent to 1 kg of dextrose. However, when fermented with most yeast strains alcohol yield is slightly lower due to a small amounts of unfermentable maltotriose sugar leaving a higher final gravity (except when French Saison or certain, diastatic Belgian style ale yeasts are used).
